STUFFED GREEN PEPPERS

Ingredients:

(4) Large green bell peppers

(1) pound ground beef

(1) small white onion (diced)

(1) Cup of cooked white rice (Minute Rice)

(1) teaspoon salt

(1) teaspoon garlic salt

(1) 15oz can tomato sauce

(1) package shredded mozzarella cheese


Recipe:

Preheat oven to 350 degrees.

Cut tops off of green peppers and scoop out all of the seeds and membranes from inside.

Add green peppers to a large pot of water.  Heat water to boiling and boil green peppers for 5-7 minutes.

Remove peppers from water after 5-7 minutes and place upside down on a plate to drain.

While the peppers are boiling, brown ground beef in a skillet until no longer pink.

Add in diced onion and cook until diced onions are soft.

Remove from skillet and drain off grease using a strainer and a bowl.

Return ground beef/onion mixture to skillet.

Mix in 1/4 cup of cheese.

Add in the cooked rice, salt, garlic salt, and (1) Cup of tomato sauce.

Stir and combine all ingredients.

Place green peppers standing upright in an 8x8 baking dish.

Spoon stuffing mixture into each pepper.

Pour remaining tomato sauce over each pepper.

Cover with aluminum foil and bake for 45 minutes.

Remove aluminum foil and sprinkle with cheese.

Bake until cheese is melted.
